Salt Recipes

Basic Pickle

INGREDIENTS:

  • 1.5lb Cucumbers - washed
  • 3.5 oz Wild Salt - ~1/3 cup + 1 TBSP
  • 1/2 cup Apple Cider Vinegar
  • 8 Cups Filtered Water
  • 4 Garlic cloves, peeled
  • Optional: 
  • 2 TSP Mustard or Dill seeds
  • 1-2 TSP Red Pepper Flakes
  • 1 TSP Organic Sugar

STEPS:

  1. Bing Salt, Vinegar and water to boil in pot.
  2. Let simmer 5 minutes then remove from heat to cool
  3. Arrange Cucumbers in clean Mason jars
  4. Split spices/garlic evenly among containers
  5. Pour brine over cucumbers until covered. Seal jar and leave in fridge for at least a day.
  6. Eat within 2 weeks.

Quick Brine

INGREDIENTS:

  • 2 Cups Water
  • 1 TBSP Salt
  • 1 TBSP Sugar 

STEPS:

  1. Combine ingredients until dissolved.
  2. Submerge protein in brine.
  3. Aprox Brine times below

Delicate fish: 15 minutes
Flaky fillets: 20 minutes
Salmon, mackerel: 35 minutes
Swordfish and other steak-like fish: 40 minutes
Chicken: 2 hours (keep refrigerated)
Pork: 4 hours (keep refrigerated)
Large roasts: 24 hours (keep refrigerated)
